my thoughts exactly. I've heard only gringos add the golf ball every time, and that in real mexican cooking it's only used at large parties where it's going to be sitting out all night. Anyone have some insight on that?

I think that's a matter of slowing the oxidation and keeping it from turning black where exposed to the air.

My gal and I like it with a healthy dosing of garlic (nice counterpoint to the lime, btw), and use all different hot-as-fuck peppers, depending on what we have -- is that authentic? Dunno, who cares?

honestly I've never really liked the guac I've had at restaurants so I'm seeking the true path before I can comfortably say I just prefer salsa.
