View Full Version : An avacado spead I sort of invented.

Take one avocado, mash it up in a bowl then add lemon juice, a dash of balsamic vinegar and grind in some black pepper. Then spread it on toast. I think you'll find that it's pretty good and the acids allow it to stay fresh for a few days in the fridge.

yeah that's almost guacamole. my guac is just avocado, lime juice, chili powder, diced jalapeņo or cayenne powder, and a bit of fresh garlic and green onion, fresh cilantro if i have any, and a dash of sea salt. so goddamn good. avocado any other way is so boring.

I'd say half a lemon's worth of juice should do. You don't want to over saturate it and turn it into a runny liquid.

I sort of invented it because I read it in a book and then stole the idea.

Virus - seems like a good idea for me to try to acquire the taste for avocado. I've never quite understood why everyone enjoys it so much, the creamy texture makes me gag (when eaten plain) so I've never added anything to it. Toast sounds like a good base for a little of that spread, will try it this weekend.

you know I'm not sure, but I'd heard it from several people over the years. I've used it and it does seem to help extend the life of a batch. I think it just interferes with the oxidation process somehow, probably by soaking up air. If you've ever seen rice in salt shakers, this is probably a similar thing (ie. they want to remove the water from the salt).

I like it in select sammiches. You get the taste, but other things are supposed to give you the texture.
