View Full Version : Pear and prune filled cookies

Now that the holidays are here its time for some delicious, fattening baked goods. Yum! The original recipe called for dates and I was all outta dates, but in this case not outta some ass kicking prunes.

You need: a nice size pear, peeled, diced and cored; 3 cups flour; 1/2 c brown sugar; 1/2 c white sugar; around a cup of prunes; 1-2 eggs; tsp vanilla ext; pinch or two of cinnamon and nutmeg; (if you like them a little spicy add some ginger); 3/4-1 cup shortening; 1/2tsp baking soda;1/4 tsp salt...

1. Puree your pear and prunes. They don't have to look like a fine paste. I think a little chunky is better. Mix in spices.

2. measure flour, sugar, shortening, etc. whip shortening and sugar very fine and blend in the flour and egg not all at once, but in stages. Basically, blend all dry ingredients until you get a nice dough. Cut it in half and let chill for around 2-3 hours.

3. after waiting, take your puree and put it in a fry pan. Heat on low to med temp and reduce liquid until pretty thick. It should be about the consistency of jam when finished and be a nice red to brown color.

4. roll out dough to about 1/8 inch and cut out circles with a cookie cutter. Add some of your pear jam in the center and repeat. take the second half of dough out and make the same size circles. Use these to cover--make a sandwich. To seal them you should brush them with a little water and use a fork to pinch around the ends. poke a hole in the top and brush the tops with egg wash. sprinkle with sugar for making pretty (step omitted).

5. heat at 375 for 10-15, enjoy. Merry Christmas.

I remember one time I was eating a nectarine. It was a hard nectarine, and from the fridge. I took the first bite and a piece of the nectarine shot off right to the back of my throat. I made the most gnarly hacking sound imaginable, like a cat choking on a fur coat or something. Naturally my mom was laughing her ass off the whole time because she said I immediately reminded her of this guy:
