View Full Version : Pork chops and mashed potatos with leeks

First off, HOG's official hog luvvin dry rub. The pig loves this, you can use it on BBQ pork loin, ribs, etc, but today it's going on pork chops. This is enough rub for 2 pork tenderloins or racks of ribs, or a shitload of chops.

4 tablespoons brown sugar
3 tablespoons paprika (smoked if you've got it)
3 tablespoons chili powder
2 tablespoons ground cumin
2 tablespoons salt
1 tablespoon garlic powder
1 tablespoon ground oregano
1 tablespoon cayenne
1 teaspoon black pepper (rough grind)

1 center cut pork chop per guest.

Rub onto pork chops, refrigerate for at least an hour, preferably a couple of hours before cooking. Pan fry chops over high heat 4 minutes per side.

For the potato's

4 medium golden potatoes. You can use red potatoes but don't use russets.
2 leeks.
1/4 cup milk or half and half
3 tbsp butter

Rough chop leaks. Wash thoroughly. Saute until tender and slightly carmelized.

Boil potatoes until soft.

Mash potatoes with leeks, butter, and milk, salt and peppr to taste.

With the potatos:

Don't just mash them, whip them. With an electric whipper. And add miracle whip.

It's a whole other world man....

And ellison, I have nothing against whipping mashed potatoes, but if you want to bring miracle whip into my kitchen, you better also bring a gun.

For mashed potatoes, put about a cup of milk in with the potatoes, then add water until the potatoes are just covered. Bring to a boil and reduce heat and simmer until tender. Use a slotted spoon to remove potatoes and use the pot water to moisten the potatoes as you beat them. They cook better that way, and will be hotter since you are not adding a cold liquid to them when you beat them.

Wow, looks like a good recipe here. Leeks are awesome, always looking for good Leek recipes.

I've found adding sour cream to mashed potatoes is an epic win. Still, leeks are awesome, especially grilled.

BTW- the following sauce is awesome for grilled pork loin: (I eyeball all the amounts so don't take them too literally)

1/3c olive oil
1/4c rice vinegar
1 shallot
3 cloves garlic
1/3c cilantro
salt + pepper

Puree all ingredients in a blender.

my current pork solutions:
mustard/vinegar/worcestershire sauce, honey ---> marinate

or

herbs, salt and pepper, some cajun spices ----> dry rub

I took a picture, but it was on a camera phone and kind of sucks. The dish was pretty good. The leek mashed potatoes is a winner! That's a great way to use leeks.

The pork chops were delicious too. The rub is spicy, but not too hot. I'm not a big pork fan overall, but these were good. I would make them again.
